“Why I am Re-branding”

Many of you may wonder why I keep re-branding. My apologies! 🙂 This is just part of living a creative lifestyle. All writing is re-writing, editing and cutting the precious darlings. Heightening, adding, and clarifying. So you will be seeing some changes as Out From Under the Rubble transforms into The Urban Herbivore…Plant-based Cooking for Busy Humans.

I just want to be of service. This past week I spoke to five different people from four different generations…. What do you think they all had in common? They all told me they are just too tired to cook when they get home from work. This is life in many parts of the world. Many of us work all day, everyday and find ourselves eating processed foods which can weigh us down–literally. Eating a well-rounded plant-based lifestyle can give you added vitality.

If finding some added vitality sounds like it might be just what you are looking for then please stay tuned. You will learn to read food labels and learn how to cook without adding salt, oils, or sugars. You will learn how to batch cook on the weekend so you can have a successful week and start feeling better by eating more nutrient dense foods.

Fall is my favorite time of year and I am working on content for Seven Sunday’s of Soup. What is more welcoming than a hearty or creamy soup as the temperature drops?

P.S. My kitchen purge was a ton of work, but so worth the effort. I tossed seven bags of garbage out of my kitchen and donated five boxes of items I no longer use. Now I can almost imagine what it would be like to win the lotto! The little things that work themselves into the back of the cabinet are amazing. Oh and the things you forgot you had!

  • Sorry I have not been posting much lately. I hope you are doing well.

Big changes are going on around here and I have been so busy I’ve just had to stay off-line. This evening I made a quick meal with roasted corn, pinto beans, green pepper, red onion, tomatoes, spinach, lime juice, and avocado.
