Banana Nut Oatmeal Cookies

Who doesn’t love bananas and walnuts? This seven ingredient cookie makes for a chewy bite of natural goodness. This whole food plant-based cookie goes nicely with a cuppa joe or tea…if you’re a tea snob. Bananas are the key ingredient. You want them to have lots of brown spots. The more spots on the banana, the sweeter and chewier your cookies will be.

 

Mash the bananas until most of the lumps are gone and add Peanut Butter, Cinnamon, Maple Syrup, and vanilla and mix together.

 

Then add the oats and work the banana mixture around the oats well. You want the oats to soak up the banana goodness. I let them sit while I breakup the walnuts into small bits.

 

After mixing in the walnuts I score the dough ball into quarters as shown below. The idea is to get four small cookies from each quad.

 

Form flat disc-shaped cookies. The cookies will not change size so you can place them close together on a non-stick liner or silpat liner.

Ingredients

  • 2 Bananas - mashed
  • 1/2 tsp. Vanilla
  • 1 tbsp. Smuckers Crunchy Peanut Butter
  • 1/4 tsp. 100% Pure Maple Syrup
  • 1/2 tsp. Cinnamon
  • 1 1/2 c Old Fashioned Oats
  • 1/4 c Walnuts - broken into small bits

Instructions

  • Preheat oven to 350 degrees. Bake for 13-15 minutes. I bake mine 15 minutes, but ovens vary.
