This recipe calls for Cauliflower because Cauliflower is the new Chicken! These yummy bites will score big with your guests. The sassy sauce is a real winner so serve them up.

If you are tailgating better double or triple the batch because they won’t be coming home! Figure one head of Cauliflower for every 4-6 people and make the Bison sauce accordingly.

  • 1 Head of cauliflower broken into bite-sized florets

For The Bison Sauce

  • 2 tbsp. tamari
  • 1 tbsp. of tomato paste
  • 1 tbsp. apple cider vinegar
  • 2 tbsp. 100% maple syrup
  • 2 tbsp. of Valentina sauce
  • 3 tbsp. of water
  • 1 tsp. smoked paprika
  • 1/2 tsp. of onion powder
  • 1/2 tsp. of garlic powder
  • 1/2 tsp. of chili powder


  • Whisk up sauce and coat the cauliflower florets. Let them marinate in sauce overnight or for at least 30 minutes and bake them off at 375 for about 35 minutes stirring after 20 minutes. Oh Goodness! Transport wings in a 9 X 13 Crockpot. Plan on one head of cauliflower for every four people and adjust sauce accordingly if you need to double or triple the batch. Shhhhhhhhhhh! Don't tell anyone they are considered a green.
